Kid lunches: corn dog muffins and loaded oatmeal cookies with a powdered sugar glaze
Kid breakfasts: my standby favorite pumpkin-chocolate-chip muffins
Monday: veggie bowtie pasta with grated sharp cheddar cheese sprinkled on top and turkey meatballs (spliced together two similar recipes, included grated carrot);this dinner was a big hit, and I’ll definitely make it again, maybe with some Alfredo or creamy sauce.
Tuesday: defrosted pork barbecue from a few weeks ago, frozen corn on the cob, cheese biscuits; felt so good to pull something out of the freezer and reminded me that I need to plan a freezer cooking day soon
Wednesday: frozen pizza bought on the way home from a looooooong day at school
Thursday: dinner with my sweetheart while my girls head off to spend the weekend with their grandparents
Friday: scrounging in the kitchen for whatever required the least preparation
Lessons learned: reminder to stock up the freezer!
