Every summer, I make all these cooking plans because I finally have the time to leisurely grocery shop, cook involved recipes and make detailed meal plans. Then every summer I remember that our kitchen doesn’t have air conditioning and how often I will want to eat popsicles for dinner and call it a day. However, I am determined to soldier forth!
Recent Recipe Attempts and Successes:
Panfried Kale from Pioneer Woman: served this with Ina Garten’s Lemon Garlic Roast Chicken, which I’d made before (modified, I don’t tie the wings with kitchen string) and small red potatoes that roasted along with the chicken; kale was okay, especially with bites of the chicken, children not convinced. It didn’t get as crispy as we wanted, so we tossed it into the broiler later that week and then it was nice and crunchy.
Cauliflower-Crust Pizza: recipes like this have been all over Pinterest; my husband liked it but I don’t think I got enough water out during the “wringing” step so it was more crumbly than crunchy. Willing to try the recipe one more time, making sure I have cheesecloth or a clean tea towel to make that step easier.
Stuffed Bell Peppers: I think the bell peppers I bought must have been much smaller than the recipe used, because I ended up with a LOT of leftover filling and sauce. I precooked the ground beef on it’s own to add a little flavor, and these were a hit.
Strawberry Jam Cream Cheese Swirl Brownies: Do not make these brownies unless you have a strong ability to control yourself; they are ridiculously good.
